Gluten Free Vegan Oat Pancakes

Who doesn't love pancakes? Who doesn't want to eat unnecessary ingredients? 
They're hearty, filling, healthy, and guilt-free!

what you'll need...

2 cups organic rolled oats
1 ripe banana, yellow and spotty
1 1/4 cup coconut mylk, or alternative mylk
1 tbsp ground flax, chia or psyllium husk + 2 tbsp water
3 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp lemon juice
2 tbsp maple syrup
1 tsp cinnamon, optional
1 tsp vanilla
1/4 tsp pink himalayan salt
optional toppings: chocolate chips, blueberries, banana slices, coconut shreds...

Starting with all dry ingredients, combine everything into a blender. Blend everything until fairly smooth but not over processed. If you are adding any extras like chocolate chips, do this after you have blended everything. Heat skillet to low-medium temp. I use ceramic non-stick pans that do not require any oil at all but if you need oil use coconut for your pancakes. Flip when bubbles form on the surface.
