Eggs Benedict: easily one of my most missed non vegan meals... except I made something better featuring those dreamy bagels and a variation of my potato cheese sauce. Get ready for a major (artery cleanse and) breakfast changer, ha!
what you'll need...

For the Hollandaise sauce I used a modified version of my Potato Cheese Sauce omitting the carrot, adding some mustard and turmeric and halving the recipe:
1 cup white potatoes, cubed and boiled until very soft
2-3 tbsp nooch (nutritional yeast), or to your taste
1 tsp dijon mustard
1/2 tsp poultry seasoning (blend of ground sage, thyme, rosemary, marjoram)
1 tbsp lemon juice, fresh
1/2 tsp pink himalayan/sea salt, add more to taste after blending
Pinch of turmeric powder
1/4 cup filtered water
Combine all above ingredients into a mini food processor (or if your blender is small enough to turn smaller amounts of liquid) - it doesn't need to be high speed, any old blender processor makes a creamy smooth sauce. Blend until completely smooth, add salt to taste.
Toast bagels and top with slices of avocado and portobello mushroom slices that have been sauteed in tamari, apple cider vinegar and some liquid smoke. Top with some greens and pour hollandaise sauce over. Top with fresh herbs and black cracked pepper. YUM
